Honey-Pumpkin Pie Recipe


This is a good recipe for pumpkin pie using honey. Pumpkin pie is a little less calories and a little more healthy than other pies. Thanksgiving would not seem the same without them. This is a recipe I found out of "Better Homes and Gardens Complete Step by Step Cookbook".

I love this cookbook. It has pictures of each step of the recipe and explains in detail how to do each step or technique. The recipe is below.

Honey-Pumpkin Pie Recipe

1 16 oz. can of pumpkin
3/4 Cup Honey

1 tsp cinnamon
1 tsp ginger
1/2 tsp salt
1/2 tsp nutmeg
1/4 tsp cloves
3 eggs

2/3 Cup evaporated milk

1/2 Cup milk Pastry
  1. In a large mixing bowl stir together pumpkin, honey, cinamon, salt, ginger, nutmeg, and cloves.
  2. Add eggs.
  3. Beat eggs into pumpkin mixture with a fork.
  4. Stir in the evaporated milk and the milk, mix well.
  5. Prepare pastry: fit into a 9-inch pie plate. Flute edges, forming a high rim to hold the filling. Do not prick the shell. Place pie shell on oven rack: pour in filling.
  6. Bake in 375 degree oven for 55 to 60 minutes or till the pie is set. Cool before serving.

Pastry for a Single Crust Pie

1 1/4 Cups all purpose flour
1/2 tsp salt
1/3 Cup shortening
3 to 4 tbs cold water
  1. Stir together flour and salt. Cut in shortening till pieces are te size of small peas.
  2. Sprinkle 1 tablespoon of water over part of the mixture; gently toss with a fork. Push to side of bowl; repeat procedure till all is moistened.
  3. Form dough into a ball.
  4. On lightly floured surface, flatten dough with hands. Roll from center to edge, forming a circle about 12 inches in diameter.
  5. Wrap pastry around rolling pin.
  6. Unroll onto a 9 inch pie plate.
  7. Ease pastry into pie plate, being careful not to stretch it.
  8. Trim edge 1/2 to 1 inch beyond edge of pie plate; fold excess under.
  9. Flute edge.
